How to Prepare Axis Venison

Axis meat is naturally flavorful and tender as well as low in fat. Grilling Axis wrapped in a strip of bacon is one technique to add fat to the meat making it juicier.

Consider seasoning the meat with pepper and other herbs during cooking and reserving salt for the table so as not to draw out moisture during the cooking process.

Recipe – Axis Loin with Gorgonzola Butter

Preheat grill

In a bowl, mash the gorgonzola cheese with softened butter and chives with a fork until mixed. Set aside. In a separate bowl, mix black pepper, garlic salt, and onion powder.

Rub Axis loin with olive oil and then coat both sides of the meat with the spice mixture.

Lightly oil the grill grate. Place meat on the grill, and cook 10 minutes per side, or to the desired doneness. Grill to rare or medium-rare for best flavor.

Remove from grill and cover with foil to rest the meat. (up to 5 minutes)

Slice meat lengthwise into thin strips. Top with a large dollop of gorgonzola butter, and serve.

Serve with grilled vegetables.

  • 1 ½ – 2 pounds Axis venison loin, trimmed of all silverskin
  • 3 T crumbled Gorgonzola or Bleu Cheese
  • 2 T softened butter (not melted)
  • 1 T fresh chives (optional)
  • 1 T coarsely ground black pepper
  • 1 t garlic salt
  • 1 t onion powder
  • 2 T olive oil
  • salt and pepper to taste

Pairing Wine with Axis Venison

Red wine and red meat are a flavorsome combination. Consider pairing Axis with an Argentinian Malbec or a dry California Cabernet Sauvignon. A French Bordeaux also compliments Axis meat.
